pampush as in Ukraine – Liberation

Nothing compares to cooking to lift your spirits. Today we are going east with Ukrainian garlic bread.

This Sunday, as the war has just entered its fourth month, we pay tribute to Ukrainian cuisine. Among dumplings (dumplings), syrniki (small pancakes), borscht (soup)… the choice is huge, as well as refined and rich gastronomy. Finally, we settled on pampush bread with garlic and parsley, the recipe of which is taken from a special edition. Simple, in favor of humanitarian aid in Ukraine (1). Pumpushka is ideal for a picnic, brunch or as an aperitif, as an accompaniment to a cocktail with or without alcohol.

For bread that will satisfy 4 people, you will need: 1 egg yolk; 400 g flour; 1 bunch of flat-leaved parsley; 1 tablespoon of powdered sugar; 4 cloves of garlic; 10 g dry baker’s yeast; 1 pinch of salt; 22.5 ml warm water.

Mix flour, baking powder and sugar. Add warm water and salt, stir for 1 minute and knead for 5 minutes. Cover (with a clean kitchen towel) and let rise for an hour (ideally in a warm room).

Shape into 6 balls, place in a greased tin and let rise for 45 minutes. Preheat oven to 200°C. Brush with egg and bake for 25 minutes. Mix chopped parsley with crushed garlic and 2 tablespoons of oil. Add to hot bread and enjoy.
